
Around the World in Reality: Return to Iceland
I typically don’t opt for travel packages, but I came across one on Icelandair that was too good to pass up. The package included flights, hotel, and two excursions, making it an unbeatable deal. As a result, we decided to return to one of our favorite countries—Iceland!
Day 1 – Sunday, October 20
HIGHLIGHTS: Sky Lagoon + Grandi Food Hall + Elding Northern Lights Boat Tour
After landing in Iceland and smoothly making our way through customs, we caught an early bus to Reykjavik. At our hotel, Grandi by Center Hotels, we were lucky enough to pay for an early check-in that included breakfast. The continental breakfast was a refreshing start to the trip before settling into our room.

After a short rest, we headed out to the Sky Lagoon, a place that holds a special spot in our hearts, so we couldn’t resist experiencing it again. This time, we opted for the Ser experience, which included private changing rooms and showers, offering a more intimate and luxurious way to enjoy the lagoon’s serene waters.



We then spent a few hours soaking in the beautiful day and crisp air. As part of our Ser experience, we were able to enjoy the 7-step ritual. The ritual begins with the cold plunge, which both Donnell and I braved for the first time. Although we had done the ritual before, this time it was even better, thanks to recent renovations—it was amazing! Afterward, we found a spot outside of the ritual area to relax and watch others attempt the cold plunge. Needless to say, not many made it past a few seconds! We also had the chance to meet some friendly Americans from DC and Texas, making the experience even more enjoyable.



For dinner, we took a short walk over to the Grandi Food Hall, where we enjoyed a delicious meal at Frystihusid Fish and Chips. Donnell had the Fish Burger, while I went for the classic fish and chips. It was some of the freshest fish I’ve ever tasted, though I wasn’t surprised—it’s hard to have a bad meal in Iceland!




That evening, we set out on a boat to chase the northern lights. Unfortunately, the sky was cloudy, so we couldn’t catch a clear view of them. However, we still enjoyed stunning views of the city and the Imagine Peace Tower. Since the northern lights were elusive, we were given a voucher to return for another chance, which was a kind gesture.


Day 2 – Monday, October 21
HIGHLIGHTS: South Coast, Diamond Beach & Jökulsárlón Tour
Our day began bright and early with breakfast at the hotel, followed by a much-anticipated tour of Iceland’s South Coast, Glacier Lagoon, and Diamond Beach. Our first stop, Skogafoss Waterfall, was absolutely majestic, offering breathtaking views and picturesque scenery. Fun fact: you can also hike to the top of the waterfall, though we opted to enjoy the view from the base instead.


We then stopped in the quaint town of Vik for lunch at Lava Café. We split a flavorful garden panini, and Donnell had tomato soup while I enjoyed a doughnut to satisfy my sweet tooth.



Behind our lunch spot, we discovered an amazing Black Sand Beach. I believe this was the first one I had ever experienced, and it was absolutely breathtaking. The stark contrast between the black sand, the deep blue sky, and the white ocean created a truly mesmerizing sight, one that I’ll never forget.




We continued on our journey to the glacial lake, where we had hoped to take a boat tour, but unfortunately, we weren’t able to this time. Nonetheless, it was fascinating to watch the large chunks of ice, broken off from the glacier, slowly drift toward the ocean. The sight of these massive icebergs floating by was truly a reminder of the power and beauty of nature.



The true gem of the day was Diamond Beach. This unique black sand beach is where the ice from the nearby glacier washes up onto the shore, creating a stunning sight.




While at Diamond Beach, Donnell and I decided to try the lobster roll from a charming little food stand called Heimahumar.


As we began making our way back, we were treated to some incredible views, including a breathtaking sight of a glacier. The sheer scale and beauty of it left us in awe, making the ride even more memorable.

For dinner, we stopped at the Ice Cave Bistro, just in time before closing. We enjoyed a generous serving of fish stew accompanied by hearty rye bread. The meal was absolutely delicious. I definitely overindulged.


Our final stop was Seljalandsfoss waterfall, and it was truly lovely to see it at night. The soft evening light cast a magical glow on the waterfall, making it an unforgettable sight to end our day.

Day 3 – Tuesday, October 22
HIGHLIGHTS: Grandi Spa + Kaffivagninn + Valdi’s + Horseback Riding + Matarkjallarinn
I started the day with some solo relaxation at the hotel’s spa, enjoying the sauna, hot tubs, and a quiet lounge all to myself—a perfect way to unwind.




Lunch was at Kaffivagninn, where I tried the recommended cod tongue, while Donnell ordered fish cakes. There was a mix-up, and we ended up with fish stew instead of fish cakes, but it was delicious. The staff kindly offered us the fish cakes on another day, which we planned to take them up on. Cod tongue was a hearty and unique experience, but it was a bit much for me.



For a sweet treat, I stopped by Valdi’s for some crispy white chocolate ice cream—an Icelandic must!


ater, we headed to Ishestar Horse Center. Donnell had been fascinated by Icelandic horses since watching a documentary about them, and it was finally time for us to ride.


We were paired with horses based on our experience level, and we both opted for beginner horses. Although I had ridden before, it had been over two decades. I was paired with a beautiful horse whose name translated to Frozen Rose. She was a seasoned mare in her twenties. At first, I thought she didn’t like me, but I quickly realized she had a personality much like mine—confident, experienced, and happy to do things at her own pace. She definitely helped me overcome my initial nervousness about riding again. Donnell’s horse, on the other hand, was as easygoing as he is.



Though I should’ve added another layer of everything—socks, thermals, and gloves—it was still a great ride with breathtaking views. The experience was truly memorable, and I would highly recommend it to anyone visiting Iceland.




We got dressed and walked to dinner, and along the way, we came across some amazing street art that really resonated with me. It captured the essence of my attempt to experience the beauty of the world, and it felt like a perfect moment of connection with the spirit of the city.

Dinner was at Matarkjallarinn Food Cellar, where we kicked off the evening with happy hour cocktails. I tried a Basil Cooler, which was made with basil-infused gin, soul cordial, and basil olive oil—a truly unique and refreshing combination. Donnell opted for Angelica’s Tradition, a blend of bourbon, angelica, sour cordial, and bitters, which he thoroughly enjoyed. Both drinks were flavorful and set the perfect tone for the rest of our meal.


If you’ve read any of my previous blogs, you know I love a good tasting menu, so I couldn’t resist trying the one here. We selected the six-course chef’s secret menu, and it was a phenomenal choice. Each dish was expertly crafted and perfectly paired, making it a dinner to remember!







Day 4 – Wednesday, October 23
HIGHLIGHTS: Lava Show + Saga Lounge
Our last day in Iceland began with a visit to the Lava Show. Watching real lava flow and learning about Iceland’s volcanic activity was fascinating and fun.




Afterward, we returned to Kaffivagninn to finally enjoy the fish cakes, which were hearty and delicious.

As we prepared to head to the airport, I bid on a Saga Premium seat and won, giving us access to the Saga Lounge. This comfortable space had excellent food options, and true to European style, there wasn’t a bartender; everyone could help themselves.

The Saga Premium seats on the plane were comfortable, and we enjoyed a salmon and black noodle dish along with some Icelandic gin. Six and a half hours later, we touched down in Raleigh, bringing an unforgettable Icelandic adventure to a close.



Final Thoughts
Iceland never fails to capture my heart, with its breathtaking landscapes, rich culture, and unforgettable experiences. This trip reminded me how much beauty there is in exploring the world and how sometimes, the most unexpected packages lead to the most incredible adventures. From the tranquil waters of the Sky Lagoon to the awe-inspiring glaciers and the unique flavors of Icelandic cuisine, this journey was a reminder to slow down, embrace the beauty around us, and make the most of every moment.
