February 7 | Superbowl Edition

It’s Superbowl Sunday! As a family who appreciates all things sports, we couldn’t miss the opportunity to celebrate the finale of football season. And though we don’t have a specific team we support, we do like Patrick Mahomes. So, this is a simple menu inspired by the Kansas City food scene.

Entree: BBQ Sliders

Kansas City is known for it’s BBQ. Since we’re both pescatarians, I decided to use No Evil here BBQ pork with Kings Sweet Hawaiian Rolls to make the sliders.

Sides: Macaroni and Cheese, Baked Beans, Coleslaw and Cornbread

Let me be honest here. I used my own macaroni and cheese recipe that I’ve been playing around with for the last few years. I also used my grandma’s baked beans recipe. I did find recipes for a more Kansas City authentic coleslaw and cornbread.

Beverage: Kansas City Ice Water

This is everything BUT ice water! It’s a fun cocktail with vodka, gin, triple sec, lime juice and lemon-lime soda. I didn’t have any triple sec, so I used Grand Marnier instead. Though my version looks a bit like dirty ice water, it was still very tasty!
